Um ever heard of Gnocchi-ng? Clearly you’re disturbing a private moment here between me and my meal.

At #OliveEnvy we are true devotees of simple home made food. Gnocchi is a star is this vein, and can please even the fussiest of diners in our household (our kids have always adored it, its great for little fingers as well).



Here is a simple, low cost recipe to expand your cooking repertoire to infinity and beyond.

Basic Potato Gnocchi recipe

Ingredients:

  • 500 g potatoes, choose a good mashing variety like russet or Desiree, or sub in sweet potato or roast pumpkin up to 500g (just make sure it’s not too wet or you may have to increase the flour ratio)

  • 140 g flour

  • 1 tsp salt

  • 1 egg

  • 1 pinch of fresh grated nutmeg

Method:

Pre heat oven to 180 deg C

Place whole potatoes on a baking tray and cook for 40min-1 hour until potatoes are roasted.

Allow to cool slightly and peel off the skins of the potato. Pass through a potato ricer or hand grate them into a bowl whilst still warm.

Mix together the flour, nutmeg and salt and place on a flat surface, make a well in the middle and add the cooled grated potatoes (and/or grated sweet potato etc.) and egg, mix together with your fingers to form a soft dough, it should not stick to your fingers. Don’t overwork your dough either.

On a lightly floured surface, cut small amounts of dough to form into ropes and cut into 3/4 inch (2 cm) pieces, then slide each piece on a fork and press to leave indentations (but not too hard).

Dust with a little bit of flour and toss, so they don't stick together. Let the gnocchi rest for 20 minutes before cooking.

Cook in salted boiling water, the gnocchi is done when it floats to the top of the water. Remove the gnocchi with a slotted spoon (draining off the water) and transfer to a heated and oiled non-stick pan to brown on a couple of sides. Finish with your choice of sauce.
