Preserved lemon, so much more than a tagine/cous cous addition!

Using our Olive Envy preserved lemon works almost anywhere lemon or salt will work. It’s amazingly versatile. 💃 Advising one to toss it into “everything” isn’t all that helpful, and even the classic suggestions of “tagine” and “grain salad” can only take you so far in getting through last year’s jar. ⠀

Whether you’ve never used them before or got that tub sitting in the back of the fridge, here’s some fresh ideas in which the use of preserved lemon really tricks up the recipe:⠀ 🍨 Desserts, preserves and beverages:⠀ • Preserved lemon curd⠀ • Preserved lemon granita⠀ • Preserved lemon and plum jam⠀ • Frozen preserved Lemon Margarita⠀ • Preserved lemon martini⠀ 😋 Condiments and soup dishes:⠀ • Potato and leek soup⠀ • Lentil and split pea soups⠀ • Moroccan chicken with preserved lemon and olives⠀ • Lamb tagine with olives and apricots⠀ • Preserved lemon aioli⠀ • Caesar salad with preserved lemon⠀ • Preserved lemon relish⠀ 🥩 Legumes and protein:⠀ • Preserved lemon hummus⠀ • White bean and preserved lemon salad⠀ • Braised halibut⠀ • Crab cakes⠀ • Grilled wild caught salmon⠀ • Harrisa spiced roast beef, preserved lemon dressing⠀ • Moroccan lamb shanks⠀ • Roast chicken with preserved lemon. ⠀ • Seared scallops with preserved lemon gremolata⠀ I use preserved lemons in practically everything, as a long-time devotee to preserved lemons there is always a tub in my refrigerator. The lemons add a little extra saltiness to a dish and they also provide a fermented umami character, in turn, intensifying the lemon flavour. In short, they are capable of completely transforming a dish for the better when used with care.⠀ Now for HOW TO USE; simply remove a quarter of lemon from the jar and rinse under cold water. If you skip this step the salt on the lemon will overpower. Pat the lemon dry and separate the peel (RIND) from the flesh with a paring knife. The preserved rind of the lemon is the real prize here, although the flesh can be used as well. To use the peel in cooking and baking, dice, julienne or finely mince it. I use it at the start of cooking to add a deeper, rounded lemon base note, or at the end as a garnish for a sharp kick to the taste buds. 💃😋
